Mixing passion and art is always a winning recipe. L'Équilibre is about a lot more than making delightful cakes and breads... It's about a perpetual quest for progress and excellence. Here we tried to really convey the philosophy of the head baker Benjamic Roc - an excellent pastry is the result of achieving a seemingly impossible balance between flavours, textures, and smells. Thus, we really wanted to convey the artistry and intentionality that goes into every pastry. A few years have passed yet this video continues to resonate with audiences and pastry-enthusiasts in the Parisian region.
